Do you love pumpkin pie? If so, I have a recipe here I think you will love, too. Pumpkin Pie Oatmeal is a delicious and nutritious breakfast recipe that is quite reminiscent of pumpkin pie.
- 1½ cups milk
- 1 cup quick oats
- ½ cup pumpkin
- 2 tablespoons brown sugar
- 1 tablespoon butter
- ½ teaspoon pumpkin pie spice
- pinch of salt
- In a saucepan, bring milk to a simmer, stir in quick oats and pumpkin, stir and cook 1 minute. Add in brown sugar, butter, pumpkin pie spice, and pinch of salt. Spoon into bowls. Sprinkle with a pinch of pumpkin pie spice, if desired. Serve warm with additional milk on the side.
This recipe is as easy as regular oatmeal, and easier than pie Just add a little canned pumpkin and pumpkin pie spice to your oatmeal and you have all the delectable tastes and aroma of pumpkin pie at breakfast time. Seriously, when I whipped up this simple recipe the whole house smelled like pumpkin pie. The taste of pumpkin pie, with the added health benefits of oatmeal. Win, win!

As my regular readers know, I tend to make “adjustments” to the recipes I find, but this one is pretty close to the original recipe. Though I do not specify a certain type of milk, the original version calls for skim milk. Plus, I give a suggestion of how to serve, FN magazine does not.
