What I love about this recipe is the versatility of it. Paula Deen’s original recipe (find it here) uses homemade pancakes. I decided to try frozen whole wheat waffles instead and was quite pleased with the result. These are also delicious without eggs and cheese. Just sausage and waffles with either syrup or some jelly spread on the waffles as a condiment. I use the Eggo brand waffles and they are very tasty in this recipe.
These griddle sandwiches would not only be a hearty breakfast but would work for an economical lunch or dinner.
I have been making homemade syrup for a few years now. It’s simple, delicious and cheap!
Breakfast Griddle Sandwiches for 2
For assembly: Cheese (I used shredded mexican blend, but you can use whatever you prefer) Butter Homemade syrup (recipe follows)
- 4 frozen whole wheat waffles, toasted
- 3-4 eggs
- Salt and pepper, to taste
- 1 Tablespoon butter
- 2 cooked sausage patties
- Scramble eggs in the butter. You may either add the cheese as the eggs are cooking or place on sandwiches during assembly.Paula Deen’s recipe calls for crumbling the cooked sausage into the eggs. I placed whole patties on the ones I made.
- Assemble sandwiches and top with butter and syrup. If you want to eat these on the go, you can leave the butter and syrup off the top. Instead spread a little butter and jelly inside the waffles before assembling.
Homemade Brown Sugar syrup:
1 cup brown sugar
1/3 cup water
1/2 teaspoon cinnamon or maple flavoring
1/3 cup butter (if desired)
Boil sugar and water in small saucepan for 2 minutes. Remove from stove, stir in the rest of the ingredients. Enjoy!
