Cheeseburger Casserole by Paula Deen

Do you love a good casserole? Have you tried this Cheeseburger Casserole by Paula Deen? Oh my gosh, so good! I refrained from eating it before I photographed it, but if I had known how good it was, I would have never been able to wait! Apparently, many of you out there already know about it, it’s been “pinned” a bazillion times (that is too a real number!), according to the original recipe, found here on PaulaDeen.com. Bobby Deen also made a skinny version, here. I combined the two for my own version because there were things I liked about both recipes.

Paula’s recipe: hamburger, Worcestershire, oregano, diced tomatoes, sharp cheddar

Bobby’s recipe: 95% lean ground beef, Dijon mustard, garlic, low sodium diced tomatoes, low-fat cheddar

Di’s version: 97% lean beef, Worcestershire, garlic, 2% sharp cheddar, fresh tomatoes for topping

Ingredients
  • 1 pound lean ground beef
  • 8 oz pasta, I used wide egg noodles
  • ½ cup chopped onion
  • ½ teaspoon jarred minced garlic
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon basil
  • 1 teaspoon oregano
  • 28 ounces canned diced tomatoes
  • 2 cups 2% sharp cheddar
  • ½ cup chopped fresh tomatoes, for topping, if desired
  • sour cream, for serving, if desired
Instructions
  1. Preheat oven to 350 degrees. Spray a large casserole dish with non-stick spray.
  2. In a large frying pan, cook ground beef until browned. Add in chopped onions and garlic, continue stirring until onions are soft, about 5 minutes.
  3. Add Worcestershire sauce, salt, pepper, basil, oregano, canned tomatoes with the juice included. Simmer about 15 minutes to allow some of the juice to be absorbed.
  4. While the meat is simmering, cook pasta, in a large pot, according to package directions. Make sure not to overcook, as the casserole will be cooked in the oven.
  5. Drain pasta. Add the meat mixture to the noodles. Pour into casserole dish. Top with cheese. Bake approximately 15 minutes, until cheese is melted and bubbly.
  6. Let casserole cool slightly, add fresh tomatoes and serve with sour cream on the side.

I’m not sure this reminded me of a cheeseburger, as Paula’s website states, however, it was really delicious. Definitely a keeper recipe. Maybe it would taste more like a burger cooked as Bobby suggests with mustard and topped with pickles. Or perhaps try my sister’s idea; top with crispy bacon strips before adding the cheese. Hello, bacon cheeseburger!
